An air fryer functions in a unique way. The principle is very similar to convection microwave ovens. As there is no direct heat, the food retains moisture, which encourages even cooking and prevents over-browning.

The rotating basket inside the machine evenly radiates high heat to the food, while the lid seals in the heat using a ceramic plate or metal grid.
